500 g Pumpkin
1 tbsp Vegetable Oil
1 tsp Black Mustard Seeds
1 tsp Fenugreek Seeds
1 tsp Garam Masala
1 tsp Mango Powder
Salt according to taste
How to prepare Kaddu ki Sabzi
Start by washing the pumpkin thoroughly. Cut it in half, remove the seeds and the cut the remaining pumpkin into medium-sized pieces.
Heat up the oil in a deep pan or wok. When it is hot, add the mustard and the fenugreek and turn the heat a bit down, so that the spices can get roasted and develop their aroma.
When the spices are changing their color to brown, add the pumpkin into the pan. Mix it well with the spices, add some salt and mix again. Place a lid on top of the pan and let it get cooked at medium heat for the next ten minutes. Stir from time to time.
