If you want to enjoy the taste of mangoes in winter, this recipe is the right one for you!
How to make Aam Papad?
You can actually use any type of mango to make Aam Papad. The rule is however: the sweeter, the better. We usually take the mangoes that come the last in summer, called ‘Chaunsa’. They are very sweet and so the Aam Papad made from this mango is also sweet. The nice thing about making it yourself is that you know exactly what is in there. If you buy Aam Papad in any shop or on the market, you can be pretty sure that they have mixed at least sugar into it.
Wash the mangoes and peel them. If you don’t want to get mango pulp all over your hands, you can first cut the lines into the mango and then pull the pieces of skin off. Once they are off, you can cut the pulp off the stone of the mangoes. Put the pulp into a blender and make puree out of it.
The next step is to put a fine, clean cotton cloth onto a plate and put the puree onto the plate. It should be thin, only a layer of about five millimeters. If you have more pulp and your plate is too small, just use a second plate and cloth.
Now the pulp has to dry, so you place it outside into the sun. Depending on where you are, this process can be done in one day or take several days. You know that it is done when you can lift it like a pancake out of the cloth.
You can store the Aam Papad in any airtight container. Simply cut it into pieces or store it as it is. It would be good however to place a cotton sheet in between each layer so that the layers don’t stick to each other and remain delicious, thin Aam Papad.
Take out your Aam Papad when you have guests or just for yourself and enjoy the sweetness of the mangoes!
