1 head-sized Hokkaido Pumpkin 4 Carrots 2 tbsp Olive Oil 1 tsp Cumin 1 tsp Garam Masala 1 tsp Coriander 1 pinch Mace 1 pinch Nutmeg 1/2 tsp Turmeric 1 tbsp Fresh Ginger in small Pieces 2 Bay Leaves Salt according to tasteHow to cook Pumpkin with Carrot
The nice thing about the Hokkaido pumpkin is that you don’t need to peel it. You just properly wash off its skin. Cut it in halves and take out the seeds with a spoon. Cut out the stem as well. Then you can cut it in slices, as you would cut a melon and finally cut those slices into pieces that could nicely fit into your mouth. Wash the carrots and, if necessary, peel them. If it is not necessary, don’t, as there are a lot of vitamins in the skin. Cut the carrots into small slices.
Heat up olive oil in a pot and when it is hot, add cumin, garam masala, coriander, mace, nutmeg, turmeric, ginger and bay leaves. Stir the spices so that they don’t burn. When they have developed a nice aroma, you can put the pumpkin and the carrots into the pot. Place a lid on the pot and let it cook on medium heat. You will need to stir regularly so that all the vegetables get nicely cooked.
It is up to you how soft you would like to eat your pumpkin. If you cook it longer, it will get mashed whereas when you take it off the fire earlier, you have more pieces to eat. Make your choice and enjoy your meal!
