- 1 large head of broccoli, cut into florets
- 2 medium potatoes, peeled and cubed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/4 tsp coriander powder
- 1/4 tsp black pepper
- 1/2 cup vegetable broth
- 1/4 cup chopped cilantro
- Salt to taste
- Ghee or coconut oil for cooking

Instructions
- Heat ghee or coconut oil in a pan. Add onions and saute until softened.
- Add garlic and ginger, saute for another minute until fragrant.
- Add turmeric powder, cumin powder, coriander powder, and black pepper. Saute for 30 seconds until fragrant.
- Add potatoes and broccoli florets. Stir well to coat with spices.
- Pour in vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes and broccoli are tender, about 15-20 minutes.
- Stir in cilantro and salt to taste. Serve warm.
