- 1 lb potatoes, peeled and cubed
- 1 lb okra, trimmed and sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/4 tsp coriander powder
- 1/4 tsp black pepper
- 1/2 cup chopped cilantro
- 2 cups vegetable broth
- Salt to taste
- 1 tbsp ghee or coconut oil

Instructions
- Heat ghee or coconut oil in a large pot or pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and saute until softened.
- Add minced garlic and grated ginger and saute for another minute until fragrant.
- Add turmeric powder, coriander powder, and black pepper. Saute for 30 seconds.
- Add cubed potatoes and saute for 2-3 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add sliced okra and simmer for another 5-7 minutes, or until potatoes are tender and okra is cooked but still slightly crisp.
- Stir in chopped cilantro and season with salt to taste.
- Serve warm with brown rice or quinoa.
