Pudine Kheere ka Raita - Mint Cucumber Yoghurt Sauce
Cool down in the heat of summer with a delicious mixture of mint and cucumber in yoghurt - just great!

500 g Yoghurt
1 Cucumber
50 g Mint Leaves
1 tsp Cumin Seeds
A pinch of Black Salt
Salt according to taste
How to prepare Pudine Kheere ka Raita
Start your preparations by washing and peeling the cucumber. Grate it into fine stripes. Next, you get to the mint. Pick out the leaves and throw away the stems. Wash the leaves well and then make a paste out of them in the blender.
In order to make the yoghurt a bit more liquid and slightly foamy, you need to blend it as well. Add the grated cucumber, the mint paste and some salt and stir well.
Take out a pan and, without adding any oil, put the cumin seeds into it. Roast them well, so that they get darker and smell wonderfully throughout your kitchen. Put them into a mortar and make a powder which you then add into the yoghurt sauce as well.
Finally, you add the black salt for intensifying the taste.
And that's it – a delicious mint cucumber raita!
