How to make Methi Chawal
There is not a lot of preparation necessary for this dish. Depending on where you buy your rice, you may have to search through it before whether there are any hard seeds or stones. But if you are confident that there aren’t, you just need to wash the rice.
Put rice, water and fenugreek in a pot, sprinkle some salt over it, stir once and then place a lid on it. Place the pot on the stove at high heat and wait for it to boil. Once it boils, turn the heat down and let the rice get cooked while you prepare the remaining dishes of your meal. Do not ever stir boiling rice!
After about ten to fifteen minutes, your rice will be ready. The signs are that there is no water vaporizing anymore, there is no boiling sound at the bottom of the pot and the tips of the rice grains are pointing upwards. Take the pot off the stove and serve it warm.
With this version of the dish, the fenugreek is mixed in the rice and you will eat the seeds as well. In case you don’t like having fenugreek seeds in your rice, there is an alternative method of preparation: instead of adding the fenugreek into the water, wrap it into a thin cotton sheet, make a knot and hang it into the rice water. Simply take it out before serving – you will have a slight taste of fenugreek and all its benefits!
