Complete your Indian snacks with this sweet and sour chutney either made from tamarind or mango powder!
How to make Imli ya Amchur ki Saunth
Take the stones out of the dates and cut them in thin, long stripes. Break the cashew nuts in pieces – they can be halves or quarters.
If you are using tamarinds for the chutney, you need to place them into the water and let them soak for 15 to 20 minutes. After that you can easily remove the stones and then mash the flesh of the fruit into the water. Mash it well so that the flesh mixes with the water and becomes a paste. You will now need to smear this paste through a sieve to get out the remaining fiber from the fruit.
It is easier if you bought the tamarind paste – simply mix it well into the water.
The same for the mango powder: pour water over it and mix it so that the powder is no longer separate and dry.
Now you heat up the oil in a pot and when it is hot, add cumin. Once the cumin starts changing its colour, you can add the water-tamarind or water-mango powder mixture into the pan. Add all spices and stir, add black salt and regular salt according to taste, add the cashews, dates and raisins and in the end, while stirring, add the sugar. Mix it all well.
Bring your mixture to a boil and keep it boiling lightly for the next ten minutes. In that time your chutney will get thicker and thicker and you can decide how thick you would like to have it. After about ten minutes you are done – and you can spread some of your chutney together with yoghurt on top of your snacks!
