Gobi Matar - Cauliflower with Green Peas
Easy to prepare, simple in its ingredients but wonderful in taste.

1 kg Cauliflower
250 g Fresh Green Peas
2 tsp Olive Oil
1/4 tsp Cumin
a pinch Asafetida
1/2 tsp Turmeric Powder
a small piece Fresh Ginger
50 g Fresh Coriander Leaves
Salt according to taste
How to make Gobi Matar
Take off the leaves of the cauliflower and wash it well. Wash the peas as well. Now you cut off the florets of the cauliflower and cut them in pieces of a size that can nicely go into the mouth. Peel the ginger and cut it into very small pieces.
Take a wok or a deep pan and heat up the oil. Once it is hot, reduce the heat to medium, add the cumin, the asafetida, the turmeric and the ginger into the pan. Stir quickly so that the spices don’t burn and once the ginger has changed it colour to a transparent shine, add the vegetables into the pan.
Mix the vegetables well with the spices and add salt according to your taste. When everything is well mixed, you can put a lid on the vegetables and just let them get done. You will need to stir from time to time. You can use the time in between to wash and pick the coriander leaves. Throw away the bigger stems and use the leaves and fine stems.
After approximately fifteen minutes you can take off the lid and add the coriander leaves. Stir and check whether your cauliflower and peas are done.
Once they are soft, take it off the stove and enjoy a great meal!
