Broccoli with Capsicum / Bell Peppers

A delicious vegetarian and Ayurvedic recipe with Broccoli and Capsicum

Ingredients

2 Broccoli
2 Bell peppers, preferably red and yellow so that you have a nice mix of colours.
2tbsp Olive Oil
1tbsp Cumin
1tsp Garam Masala
1tsp Coriander
1tsp Turmeric
1tbsp Freshly Chopped Ginger
10-15 Curry Leaves
1tsp Mango Powder
Salt according to taste

Wash and cut the broccoli and the bell peppers into small pieces. Heat up oil in a pot and, when hot, add cumin, garam masala, coriander, turmeric, ginger and the curry leaves. Turn the heat down and churn the spices until you can smell them in the whole room.

In the next step you add the broccoli into the pot and mix it well with the spices. Place a lid onto the pot and after five minutes open it and add the bell peppers. Mix them well with the broccoli and add as much salt as you like in your food.

Churn your vegetables from time to time and check by pressing against them with your cooking spoon whether they are already soft. Everybody enjoys his broccoli cooked to a different degree. Whenever you feel it is soft and nice to eat, turn off your stove and finally mix the mango powder into the dish. It will give it an exciting sourly taste which blends in nicely with the other spices and the natural taste of the vegetables.

Ayurvedic Benefits

Broccoli is a Vata increasing vegetable that simultaneously pacifies Kapha. Capsicum increases Pitta and slightly Vata while it pacifies Kapha. The combination is thus good for people with excessive Kapha. As we used a combination of cumin and ginger, the dish will also not increase your Vata.
