1 kg Okra
2 tbsp Chickpea Flour
1 tsp Garam Masala
1 1/2 tsp Coriander Powder
1 1/2 tsp Mango Powder
1/2 tsp Turmeric
a bit of Water
1 tbsp Vegetable Oil
1 tsp Cumin Seeds
Salt according to taste
How to prepare Bharwa Bhindi
Start by washing the okra and then drying them well with a kitchen towel. You need to do this in order to prevent the gum from inside the vegetables from flowing out and sticking everywhere.
Now roast the chickpea flower in a pan without any fat until it changes colour. It takes about five minutes. Take it off the stove and mix all spices into it except for the cumin. Add salt and mix it all well. Now you add a bit of water in order to make it a thick paste.
Heat up the oil and when hot add the cumin seeds. Roast them and then add the paste. Roast it until it has developed a nice aroma and has a nice thick consistency which you will be able to stuff into the okra. After about three minutes, you can take the pan off the stove.
Now you take the okra and make a cut into each of them lengthwise in order to fill the spices in. Heat up the oven on 180 degrees. Now you take each okra and stuff the spice paste into them. Once all are filled, take a kitchen brush and apply a bit of oil on the outside of each okra. Place them on a baking tray with baking paper and when done, place the tray into the oven.
Let the okra bake for the next twenty minutes. Take them out and enjoy!
