Ingredients
1 kg Fresh Spinach 3 l Milk 3 Lemons 1 tbsp Olive Oil 1 tsp Cumin 1 tsp Garam Masala 2 tsp Coriander 1 tsp Turmeric 1 tbsp fresh Ginger in small pieces Salt according to taste. How to cook Palak Paneer
Start by making paneer with the instructions given in this recipe. When you have poured out the water and have only the cheese left, you put it into a very fine kitchen towel and hang it in the towel over a bowl so that some more water can drip out.
While the paneer is hanging there and losing its water, you can wash the spinach and cut the leaves into small pieces.
Heat up olive oil in a pan and add cumin, garam masala, coriander, turmeric and in the end the ginger. As always, keep on stirring and don’t let the spices burn. When it is hot, add the spinach and some salt, mix it and cover the pot with a lid. In this way you let it cook for about ten minutes on medium heat.
After these ten minutes, you will see that there is water at the bottom of the pot. Open the lid and add the paneer by breaking it into small pieces with your hands. Mix the spinach with the paneer and keep on stirring it until the water is vaporized. Roast is a bit more until you feel you have reached the point where your food cannot get any more delicious.
Take it off the fire, put the food onto a plate and enjoy!
Ayurvedic Values
Paneer is full of proteins and calcium and from nutritional point of view a valuable part of your nutrition, especially for vegetarians who need their proteins. Ayurveda tells us that paneer reduces Pitta.
This is good because the spinach increases the Pitta in your body and it will thus be balanced. Additionally spinach creates Vata, the air in your body, but for that we used ginger, which reduces gas building in your intestines.
Spinach is known as an important source of iron and calcium. All in all this dish is good especially for your hair, nails and skin.
