How to make Aloo Soya ki Badi
Heat up some water and place the soya chunks into it to let them soak for about fifteen minutes. In the meantime you can wash the potatoes thoroughly and then cut them into medium-sized pieces. You don’t need to peel the potatoes if you have washed them well.
When the soya badi have soaked for fifteen minutes, you take them out of the water and squeeze them to press out extra water from the chunks.
Heat up the oil in a wok and when it is hot, add cumin. When the cumin is roasted a bit, add the soya chunks and stir. Stir from time to time in the next five minutes until they have slightly changed their colour. Now you can sprinkle the garam masala, coriander and turmeric on top of them and stir to mix them well into your dish. In this way you roast the spices together with the soya chunks for two minutes before you add the potato pieces as well. Stir them from time to time.
After five minutes, add the water into your wok, stir and place a lid onto the wok. Let your dish get cooked in the next fifteen to twenty minutes and stir from time to time. After this time you check whether your potatoes are soft – and once they are, your dish is done!
