200 g Paneer

2 l Milk and
2 Lemons
100 g Green Peas
100 g Bell Pepper
100 g Carrots
100 g Sweet Corn
200 g Tomatoes
1 tbsp Olive Oil
1/2 tsp Cumin Seeds
1/2 tsp Coriander Powder
1/2 tsp Turmeric Powder
1/2 tsp Garam Masala
1 tsp Ginger Powder
Salt according to taste
How to make Vegetable-Paneer-Mix
You can choose to buy paneer or you can instead make it yourself with this recipe. Wash all your vegetables, peel and cut the carrots and cut also the bell pepper into small pieces. Peel the green peas if you got them with their hulls.
Heat up the oil in a pan and when it is hot, add cumin, coriander and turmeric. Stir to prevent them from burning. When they are slightly changing their colour, you can put peas, carrots, bell pepper and sweet corn into the pan. Mix the vegetables well with the spices and cover the pan with a lid for the next five minutes.
Stir from time to time while you do further preparations: you have to cut the tomatoes into small pieces and also make the paneer small. If you made it fresh, that is easy: just crumble it apart. If you bought it, you will have to grate it into fine pieces.
When the five minutes are over, you can lift the lid and check: the vegetables should be rather soft by now. Add tomatoes and paneer and let it cook another three minutes with an open lid and while stirring from time to time. Finally you add salt, garam masala and ginger powder. Mix it all into your dish, let it get warm and there you are: a delicious paneer dish to go with any food! Eat it warm or cold as a salad – you will love it!
