500g Potatoes
1 tbsp Olive Oil
1 tsp Cumin
1 tsp Garam Masala
1 tsp Coriander
6 Curry Leaves
1/4 tsp Black Pepper Powder
½ tsp Mango Powder
Salt according to taste
How to make fried potatoes with less fat?
Instead of just peeling the potatoes and cutting them into the pan as you would usually do it to make fried potatoes, we start differently today. Wash your potatoes and then put them into a pot with water. Place that pot on a stove and boil the potatoes. By sticking a vegetable knife into the potatoes, you can determine when they are done. Once they are soft inside, switch off the stove and pour away the water.
You can rinse the potatoes with cold water or just wait for them to cool down a bit so that you can peel them. Don’t wait too long though – it will get more difficult the longer you wait. After peeling, cut them into big pieces.
The next step is to take a pan and heat up the olive oil. When it is hot, add the cumin seeds, garam masala, coriander and the curry leaves. You need to stir to prevent them from burning. When they have developed their aroma, you can add the potatoes. Now you need to stir to fry them from all sides.
Your potatoes could be ready very quickly now. If you have some time though and would like an even better taste, you fry and stir them a bit longer. The effort is worth it - it tastes better with each minute.
Once the potatoes have reached the colour that you like, sprinkle salt, pepper and mango powder on top. We don’t use much pepper so that we get a nice bit of spice but it won’t get hot. Of course that is up to you! Now you only need to mix it once more and then you can serve it!
