10 Lotus Seed Heads
1 tbsp Vegetable Oil
½ tsp Cumin Seeds
½ tsp Coriander Powder
½ tsp Garam Masala

How to make Kamal Gatta
The preparation is what takes most of the time with this dish. You need to break the seeds out of the seed head and peel off the thin shell which is like rubber and comes off quite easily. Break each seed into halves and take out the green germ which you find inside. This is a small but bitter piece and your dish will taste much better without it! At this point, you can try the slightly sweet seeds raw – they are delicious!
Heat up the oil in a pan and, when it is hot, add cumin and coriander. Stir the spices so that they don’t burn. When they have slightly changed their colour, you can add the lotus seeds. Stir them and let them get roasted in the next five minutes. You need to stir from time to time.
After five minutes, sprinkle salt and the garam masala over your lotus seeds, stir once more to mix it all really well and finally take it off the stove.
