How to make Lauki ka Halwa?
First of all you wash the bottle gourd and then cut off a small piece from both ends. In the next step you peel the vegetables and finally you grate them to fine, small stripes.
Heat up the ghee in a deep pan and when it is hot add the bottle gourd. You have to keep on stirring and will notice that the bottle gourd leaves water which accumulates in the pot. It will cook itself in this water within the next ten to fifteen minutes.
Once the water is gone and the colour changes a little bit, you can add the sugar and mix it well with the vegetable. For about ten minutes you need to go on stirring.
The halwa is done when you notice that the bottle gourd is releasing some of the ghee you have cooked into it. Take it out of the pot, spread it onto a plate and let it get cool.
