Cabbage with Potatoes
An easy vegetarian and Ayurvedic dish with Cabbage and Potatoes
Ingredients
500g Cabbage
250g Potatoes
1 ½tsp Vegetable Oil
½tsp black mustard seeds, 1 tsp cumin, ½tsp turmeric, ½tsp garam masala, ½tsp coriander, salt according to taste
Preparation
In its preparation this is a very easy dish and its magic is in the spices as well as bringing the cabbage to the right point of being cooked. It should not be raw anymore but it should also not be fully soft. It is best if you still have a little bit of vegetable to bite!
First of all you have to wash, peel and chop the potatoes in small pieces and the cabbage in small stripes. If you want, you can also wash the potatoes very thoroughly and just cut them together with their peel. Most vitamins are in the potatoe&rsquos skin, so this would be healthy, just make sure you really clean it! Of course, if you like potatoes very much, you can add more of them or just put less if you are not really a potato fan. 
In the next step you put a pot on your stove. Best would be a wok or a non-stick pot. You add the oil and let it get hot. You can always test if it is hot by putting one of the cumin seeds and seeing if it starts frying. If it does, you add the rest of the cumin seeds and the mustard seeds and stir them.
Before they get black, you add the potatoes and fry or roast them along with the cumin and the mustard. Now you can add the turmeric and watch how your potatoes change colour.
When the potatoes are half done, you need to add the cabbage into the pot and some salt. Now you let the mixture cook on middle heat and stir from time to time. Check repeatedly if the cabbage has reached the consistency that you like. Now you add garam masala and coriander and your Indian vegetables are ready!
