Instructions
- Begin by preparing your lady finger and tomatoes. Ensure the lady finger is thoroughly dry before slicing to prevent sliminess during cooking. Once sliced, set aside both vegetables.
- heat the coconut or sesame oil in a heavy-bottomed pan or skillet over medium heat. Once the oil is warm, add the cumin seeds and allow them to splutter briefly, releasing their aromatic essence. Then, stir in the asafoetida and grated ginger, sautéing for about 30 seconds until fragrant.
- Now, add the sliced lady finger to the pan. Stir well to coat the okra with the seasoned oil and cook for approximately 8-10 minutes, stirring occasionally, until it starts to become tender and loses some of its stickiness. You'll notice a beautiful light browning developing.
- Subsequently, incorporate the chopped tomatoes into the pan along with the turmeric powder, coriander powder, and optional red chili powder. Mix everything thoroughly and continue to cook for another 5-7 minutes, or until the tomatoes soften and blend into a lovely, saucy consistency around the lady finger. Season generously with salt and a pinch of fresh black pepper to taste.
