Aloo Gajar - Potatoes with Carrots
A very basic dish which tastes great every time. Enhance your regular potato-carrot-dish with some mango powder and make eating it a completely new sensation!
How to make Aloo Gajar?
First of all you need to properly wash the carrots as well as the potatoes and then peel both of them. Cut off the ends of the carrots and cut them into small pieces. Cut the potatoes in small pieces as well but keep both vegetables in separate bowls.
Heat up the oil in a wok or a deep, non-stick pan. Once it is hot, add the cumin and, after stirring quickly, add the coriander powder and in the end the turmeric. Stir so that the spices can develop their aroma and finally add the potatoes. Mix them with the spices and place a lid onto your pan to let them get soft. Stir from time to time.
After about five minutes, when the potatoes have started getting soft, you can add the carrots and some salt. Stir once and place the lid back on. Now you need to wait another five minutes and stir from time to time.
Take the lid off after those five minutes and let the potatoes and carrots fry a little bit more. Once they are soft, you can spread the garam masala and the mango powder on top and stir once more. If you like it a bit more sour, just use some more mango powder!
Finally, you can take your wok or pan off the stove and enjoy a delicious Aloo Gajar dish!
