Ingredientes
- 1 tbsp ghee or coconut oil
- 1 inch ginger, grated
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- Pinch of black pepper
- 4 cups chopped carrots
- 4 cups vegetable broth (low sodium)
- 1 tbsp lemon juice
- Salt to taste
- Fresh cilantro, chopped (for garnish)

Instrucciones
- Heat ghee or coconut oil in a pot over medium heat.
- Add grated ginger and cumin seeds. Sauté for 1 minute until fragrant.
- Add turmeric powder and black pepper. Sauté for another 30 seconds.
- Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until carrots are tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in lemon juice and salt to taste.
- Garnish with fresh cilantro before serving.
