Ingredients
- 250g Lady Finger (Okra), washed and trimmed
- 250g Tomatoes, chopped
- 1 small Onion, finely chopped
- 1 tsp Ginger, grated
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1/4 tsp Coriander powder
- 1/4 tsp Red chili powder (optional)
- A pinch of Asafoetida (hing)
- 2 tbsp Coconut oil
- Salt to taste
- Fresh coriander leaves for garnish

Instructions
- Heat coconut oil in a pan. Add asafoetida and cumin seeds. Let them splutter.
- Add chopped onions and saute until golden brown.
- Add grated ginger and saute for a minute.
- Add chopped tomatoes and saute until softened.
- Add turmeric powder, coriander powder, and red chili powder (if using). Mix well.
- Add lady finger and salt. Saute for 2-3 minutes.
- Add 1/2 cup water, cover the pan, and simmer for 10-12 minutes or until lady finger is tender.
- Garnish with fresh coriander leaves and serve hot with brown rice or roti.
